Enjoy every little bite of this fresh, healthy and tasty salad. Rockit™ apples, halloumi, chickpeas and slaw is the perfect combination to refuel you during the day or as a light and wholesome dinner.

Method

  1. Place all the dressing ingredients in a small jar. Shake well to mix and season generously.
  2. Add the cabbage, carrot, chickpeas, apple slices, spring onion and mint in a large mixing bowl. Pour over the dressing and toss well.
  3. Heat a drizzle of oil in a pan over a medium heat. Cut the halloumi into bite-sized slices and cook for a minute or so on each side until golden bowl. Add to the slaw and serve while halloumi is still warm.
