Rockit apple festive trees

Ingredients

• Rockit™ apples
• Carrots
• Watermelon
• Cheese
• Fresh blueberries

Method

1. Cut carrots into sticks to be the trunk of the trees.
2. Slice Rockit™ apples (removing the core) and lay these out to be the branches of the tree.
3. Use a small star shaped cookie cutter to cut stars from slices of watermelon and cheese. Lay these over the apple slices to look like decorations. Use a star-shaped piece of cheese to be a golden star on top of the tree.
4. Fresh blueberries can be added to look like baubles.
5. Serve immediately and enjoy!

Rockit apple festive wreaths

Ingredients

• 3 Rockit™ apples
• 1 tub spreadable cream cheese
• 1/3 cup finely chopped pistachios
• ½ cup freeze-dried raspberry
• 9 fresh raspberries

Method

1. Slice Rockit™ apples widthways into 1 cm circles.
2. Use an apple corer to remove the centre.
3. Use a paper towel to pat away excess moisture so that the cream cheese will stick to the apple.
4. Spread cream cheese thickly on one side of each apple slice. Use the side of the knife to tidy the edges.
5. Sprinkle the cream cheese-spread side with chopped pistachios and a generous crumble of freeze-dried raspberries.
6. Cut the top from each raspberry to create a little ring and place this at the top of each “wreath”. Serve immediately.
