Apple and mango sago, also known as tapioca pudding
Serves 4 

This refreshing dessert is an absolute delight of flavour and texture. It’s entirely sugar free so is a fantastic, healthy choice. 

Ingredients

Method

  1. Bring a medium pot of water to a boil. Add the tapioca pearls, stir and bring to a boil again. Reduce to a simmer and cook for 20 minutes until the pearls are translucent. Pour into a sieve and run under cold water to cool.
  2. Add all the remaining ingredients to a blender and blitz until silky smooth.
  3. Pour into a large bowl and add the tapioca pearls. Mix well. Place in the fridge to chill until ready to use. Spoon into individual glasses or bowls. Add some sliced apple and a little toasted coconut just before serving.
