Rockit™ apple Baklava

Rockit™ apple Baklava is a healthy and delicious twist on a traditional Ramadan recipe. Our sweet and crisp apples take this Baklava to another level. Share with your friends and family, alongside a refreshing drink. Recipe was developed by @everylittlecrumb

Makes 20-24 slices

Honey Syrup

  • 1/2 cup sugar
  • 1/2 cup water
  • 1/4 cup honey
  • Squeeze of lemon


  • 1/2 cup melted butter
  • 1 pack filo pastry (24 sheets)
  • 1/2 cup walnuts
  • 1 tsp cinnamon
  • 4 tbsp honey
  • 4 Rockit™ apples, peeled and sliced thinly
  1. Preheat oven to 180c
  2. In a saucepan, combine Honey Syrup ingredients. Bring to a boil over medium heat, once boiling reduce to low and simmer for 5 minutes. Set aside to cool.
  3. To prepare the filing, place walnuts in a food processor. When walnuts look like fine crumbs, transfer to a bowl and mix with honey and cinnamon until combined.
  4. Cut the filo sheets to the same size as an 8×8 inch pan. Lightly grease the base of the pan with melted butter, place each filo sheet on top of each other with a brush of melted butter in between each layer.
  5. Add prepared filing and spread it out evenly. Top with thinly sliced Rockit™ apples.
  6. Add another sheet of filo on top, brush with melted butter and repeat this process with another 12 sheets of filo.
  7. Use a sharp knife to cut diagonal into the Baklava, pour any remaining melted butter on top.
  8. Bake for 20 minutes, then reduce oven heat to 160c and bake for another 35-40 minutes or until Baklava is golden brown.
  9. Remove from the oven and pour the Honey Syrup all over the hot Baklava. Let it sit in pan until syrup is absorbed, this can take a least 1 hour.
