Makes 20-24 slices
Ingredients
Honey Syrup
- 1/2 cup sugar
- 1/2 cup water
- 1/4 cup honey
- Squeeze of lemon
Baklava
- 1/2 cup melted butter
- 1 pack filo pastry (24 sheets)
- 1/2 cup walnuts
- 1 tsp cinnamon
- 4 tbsp honey
- 4 Rockit™ apples, peeled and sliced thinly
Method
- Preheat oven to 180c
- In a saucepan, combine Honey Syrup ingredients. Bring to a boil over medium heat, once boiling reduce to low and simmer for 5 minutes. Set aside to cool.
- To prepare the filing, place walnuts in a food processor. When walnuts look like fine crumbs, transfer to a bowl and mix with honey and cinnamon until combined.
- Cut the filo sheets to the same size as an 8×8 inch pan. Lightly grease the base of the pan with melted butter, place each filo sheet on top of each other with a brush of melted butter in between each layer.
- Add prepared filing and spread it out evenly. Top with thinly sliced Rockit™ apples.
- Add another sheet of filo on top, brush with melted butter and repeat this process with another 12 sheets of filo.
- Use a sharp knife to cut diagonal into the Baklava, pour any remaining melted butter on top.
- Bake for 20 minutes, then reduce oven heat to 160c and bake for another 35-40 minutes or until Baklava is golden brown.
- Remove from the oven and pour the Honey Syrup all over the hot Baklava. Let it sit in pan until syrup is absorbed, this can take a least 1 hour.
