This Rockit™ apple candied walnut salad is nutritious and delicious. Easily assembled with your choice of greens, cranberries, feta and a simple dressing. Recipe was developed by @everylittlecrumb
Ingredients
Dressing
- 2 tbsp apple cider vinegar
- 1/4 cup olive oil
- 1 tsp dijon mustard
- 1 tsp honey
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 red onion sliced thinly
Candied Walnuts
- 1/2 tbsp butter
- 2 tbsp coconut sugar
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1/2 cup walnuts (or any nut you prefer)
Salad
- 2 Rockit™ apples, sliced thinly
- Squeeze of lemon juice
- Mixed salad greens
- 1/3 cup cranberries
- 1/4 cup feta, crumbled
Method
- Place all dressing ingredients in a bowl and whisk together
- Add onion and stir to coat. Let onion sit in dressing for at least 10 minutes to allow onions to start pickling.
- Make the candied walnuts by adding butter, coconut sugar, salt and cinnamon to a pan over medium heat. Once the butter and sugar start to sizzle, add the walnuts and stir for 2 minutes or until toasted. Immediately transfer to parchment paper and cool for 10 minutes. Roughly chop.
- Assemble salad by placing greens in your serving dish, top with cranberries, apples slices, feta, candied walnuts and onion dressing.
