Rockit apple cinnamon french toast

This skillet baked french toast is healthy, packed with energy and is a great option for a breakfast or dessert. Recipe developed by @bon_appetit_jeddah.
  • 6 slices brioche bread
  • 2 Rockit apples peeled and cut into cubes
  • 1½ tbsp corn starch
  • 4 large eggs
  • 1 cup of milk
  • 1 cup of heavy cream
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 1 cup of walnuts chopped
  • Pine nuts (optional)
To serve
  • Icing sugar
  • Cinnamon sugar
  • Maple syrup / coconut nectar
  • Heavy whipped cream to serve
  1. Cut the brioche into cubes.
  2. Place into a large bowl with cut apples.
  3. Add lemon juice, vanilla and corn starch and mix well.
  4. In the seperate bowl, whisk eggs and add milk and cream. Mix well.
  5. Grease two skillets 4x4 inches or one large 8X8 inches with butter.
  6. Put the dry ingredients into the bottom of the skillets and pour the wet ingredients over them. Refrigerate over night.
  7. Remove skillets from the fridge and add chopped walnuts and sprinkle over cinnamon sugar.
  8. Bake at 150C for 20 - 25 min until golden brown on top.
  9. Dust with icing sugar.
  10. Pour the maple syrup / coconut nectar on top and serve with whipped cream.
