Rockit™ apple rice paper rolls

These Rockit™ apple rice paper rolls are fresh, healthy and tasty. Filled with crunchy tofu, apples and a variety of colourful vegetables served alongside a delightful satay sauce – it’s the perfect light lunch.

Ingredients

  • 2 Rockit™ apples, core removed and sliced thinly
  • 450g firm tofu
  • Cornflour for coating tofu
  • Sea salt and cracked black pepper to taste
  • 1 packet round rice paper wrapper
  • 3-4 leaves of lettuce
  • 2 cups vermicelli noodles cooked
  • 1 large carrot, cut into thin matchsticks
  • 10cm piece cucumber, cut into thin matchsticks
  • 1 red capsicum, cut into thin matchsticks
  • 1 avocado, sliced
  • Oil for flying

Satay sauce

  • 1/2 cup smooth peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • 2 tablespoons coconut cream
  • Hot water as needed to adjust thickness of sauce

Method

  1. Whisk together all the satay sauce ingredients and thin with hot water until you have a consistency that is suitable for dipping.
  2. Cut the block of tofu into 1 cm thick slices and then half these so you have long strips. Dust generously with cornflour that has been well seasoned with sea salt and black pepper.
  3. Heat a generous glug of oil in a pan over a medium heat. Cook the tofu until golden on each side.
  4. Assemble all your fresh ingredients and the noodles in their separate piles on a board to make it easy to assemble.
  5. Soak a rice paper wrapper in a shallow bowl of warm water for 10-15 seconds. Place on a damp surface.
  6. Start with a small piece of lettuce. Top with some noodles. Follow with a few pieces of carrot, cucumber and capsicum. Top this with avocado.
  7. Just beside this (closer to the centre), place some apple, mint slices and a piece of tofu.
  8. Fold the edge of the rice paper roll closest to you over the first pile and then tuck in the edges as you roll over the tofu and apple. Roll all the way to the other edge ensuring the sides are tucked in and the roll is sealed at the end.
